Yummy Granola Bars

Ben and I love granola bars!!! I always seem to have a dilema when I go to the store though, because they are expensive, and loaded with sugar (the evil enemy). I recently came across this recipe for yummy homemade granola bars, so I thought I would share it with my fellow blog stockers!!

Oatmeal Fruit Bars

1 C. Butter (2 sticks softened)
1 C. Firmly packed brown sugar
1/2 C. Sugar
2 Eggs + 1 Egg white
1 tsp. Vanilla
1 1/2 C. Flour
1 tsp. Baking Soda
1 tsp Cinnamon
1/2 tsp. Salt
6 C. Old fashioned oats
2 C. Mixed dried fruit/nuts

Preheat oven to 350 degrees. Beat together butter and sugars until creamy.
Add eggs and vanilla. Beat well. Add flour, baking soda, cinnamon, and salt. Mix well.
Slowly stir in oats and fruit. Press into metal 9x13 pan. Bake 30-35 min. or until golden on top(I didn't bake them that long, so watch them!) Yummy Yummy Yummy!!!

Enjoy
